HAPPY ST. PATRICK’S DAY!

Today is a day that our family really enjoys celebrating – from the wearing of the green to the eating of the corned beef, and especially the drinking of the Guinness!  😉

One of our favorite things to make our St. Paddy’s Day feast fun is making a ‘Shamrock Punch’.  Since none of us is a huge fan of the exactly 2 Kool-Aid flavors that are actually green, nor are we overly fond of adding lime sherbet to our beverages, we improvise a little on the green-ness …  but the end result is perfect!

I have been collecting St. Patrick’s Day recipes for a long time.  Some don’t always turn out as yummy as we hope (lime sherbet in ginger ale – yuk!).  But this was very well received by all my Little Miracles, and Big Daddy, too.  Sláinte!

What you need:

  • 1 46 oz. bottle of pineapple juice
  • 1 can frozen lemonade concentrate
  • 1 can frozen limeade concentrate
  • Ginger Ale

What to do:

Mix pineapple juice and both frozen concentrates in a pitcher.  I like to dilute this mixture with water before I pour into glasses and add the ginger       ale, but if you prefer, leave it full strength and add enough ginger ale to give it some sparkle.  This recipe is so versatile and super easy to adjust to your personal taste.

It was definitely yummy and a refreshing accompaniment to our salty Reuben sandwiches at lunch time.  I even have enough corned beef leftover to make Corned Beef Hash for supper!  Yay!  I promise to try and get pictures of that, but, seriously y’all … when the hoards descend on the supper table it can get a little dangerous.

You don’t have to be Irish to celebrate St. Patrick’s Day, though I think it adds a little more sentimentality to the day since our family’s roots do go back to the Emerald Isle.  But the traditions of the Irish are certainly observable by everyone — thankfulness for our blessings, love of family, and celebration of life through fun and food!

I would love to know how your family celebrates this fun and festive holiday.  And, if you would like to know the true meaning of St. Patrick’s Day, check out what our Irish-Viking Dachshund Georgie has to say about it on her blog.

In the meantime, here is my wish for you, friends:

Wishing you a rainbow
For sunlight after showers—
Miles and miles of Irish smiles
For golden happy hours—
Shamrocks at your doorway
For luck and laughter too,
And a host of friends that never ends
Each day your whole life through!

Go n-eírí an bóthar leat. (May the road rise with you.)

Love & Blessings,

That Farm Mama
